It could be the crusty, gently fried bread, or the winning combination of ham and cheese that makes this recipe a favorite. Easy and quick to make, paninis pair well with soups and salads to round out a healthy, satisfying meal.
1 small, hoagie-size roll or small loaf of French bread
1 teaspoon infused butter
or oil 2 pieces of ham or prosciutto 2 pieces of cheese, such as swiss or provolone Yellow mustard Sliced pickles (optional)
Cut bread in two and spread infused butter or oil on insides. Layer two pieces of ham (or prosciutto, which makes a nice substitute), two pieces of cheese, mustard, and, if you prefer, pickles on the bread. Then place it in a panini press until golden brown. If you don’t have a panini press, simply place the sandwich in a cast iron or heavy pan and place another heavy pan on top of it. Check periodically, flip once, and remove from pan when golden brown and cheese is melted and gooey. Serves 1.
